We can't reasonably maintain this override since a) haskellPackages.opencv is marked as broken in nixpkgs and b) opencv3 has been removed from nixpkgs.
These overrides concern obsolete packages (pandoc-citeproc has been replaced by citeproc and can't be reasonably built anymore) or package versions that aren't shipped by Nixpkgs anymore (pandoc < 3.6).

I did not do a comprehensive review for a lack of time, just removed some stuff that was immediately obvious to me.
