use specific version instead of latest

Describe the bug

Releases can fail when latest is not updated, as seen with release 8.22.0

cnspec 8.21.3 is already installed but outdated (so it will be upgraded).

We need to use the specific version number in https://github.com/mondoohq/homebrew-mondoo/blob/master/generator/main.go#L21-L41 and use install.mondoo.com
